Synopsis: This unit is designed to give students the ability to apply business organisation and management concepts in viticulture and wine production. It builds on the student's knowledge of the science and technology of grape and wine production provided in the prerequisite applied science subjects. Topics covered include: written and verbal communication, strategic and operational planning, managing raw material procurement, organisational design, staff training and motivation, total quality management and industrial relations and safety issues.
Assessment: Four minor assignments: 20% + Major assignment: 20% + Final examination: 60%
Prerequisites: Previous study of appropriate applied science units or recognised industry experience
