6 points + Second Semester + 5-day residential block and off-campus distributed learning + Peninsula + Prerequisite: ASC4717

Synopsis: Clonal selection: cool climates, disease and weather tolerant varieties; Site selection: drainage, control of vigour; Frost control: amelioration, cover crops, sod culture; Canopy management: methods, alternatives; Pest and disease: identification, control, effects on wine quality; Winery operations; Relationship between vineyard and winery: handling, transport; Equipment: options, capacities, orientation, siting; Winery design: siting, processing and marketing requirements, OHS issues, structural options, floor plans.

Assessment: Examination (3 hours): 50% + Two assignments (1500 words each): 15% each + Post-course assignment (2000 words): 20%
