Synopsis

Soil management: amelioration, cultivation, herbicides, sod culture, cover crops, frost control, nutrition; Pruning: methods, alternatives, demonstration, and assessment of pruning level; Pests and Disease: identification, effect on wine quality, ideal conditions for, and control of; Operation and maintenance of equipment; Wine characteristics: type, flavour profiling, smell, climate influence, varietal characteristics, faults and their causes and prevention; Vineyeard tour and inspection; Health and legal issues associated with alcohol consumption.

Objectives

The learning goals associated with this unit are to:

• develop an in-depth knowledge of soil management for winegrowing
• gain insight into alternative pruning methods
• acquire knowledge of pests and diseases and their effect on wine quality
• apply tools and techniques to analyse wine characteristics including flavour profiling and varietal characteristics
• apply analytical methods to identify wine faults and their causes and prevention.

Assessment

Examination (2 hours): 40%
Two Assignments (2000 words each): 20% each
Practicals: 10%
Tour report: 10%
